My husband says this is good, old-fashioned comfort food. Something that is often in short supply for a diabetic on a Keto diet.
Keto Smoked Sausage Casserole has the word 'casserole' in the title, but it IS cooked in a crockpot.
Here are the changes I made:
- I use 2 bags (approximately 20 oz) of frozen cauliflower to cut down on food waste in our home
- I double the kielbasa. My husband is a carnivore, and when the meat is skimpy, he will mention it.
- I use already shredded cheddar cheese. Why make more work for yourself?
- I eliminate the butter. It is NOT needed.
- I bought the Glucomannan, but I didn't notice a huge difference. Meaning it barely 'thickens,' so I don't use it anymore. Again, why make more work for me?
- I also don't bother topping it with fancy greenery. Because more work isn't necessary.
I plan on making this next week. I buy the Fancy Shredded Sharp Cheddar Cheese. I am glad you said the butter wasn't needed. Way less calories.
